Through Irish Eyes: BBQ and Soul Food

"In my efforts to adapt to southern life, I have decided to go full throttle and embrace soul food or southern cuisine,

So soul food,
It's not the healthiest, it's often not the prettiest but it is truly mind blowing.

Dorothy Siler, New Jerusalem Baptist Church,"Soul food, Good service and christian folks, we just love the atmosphere we just sit around in fellowship, a nice place to come sit and eat"

Here at C and W café if it's not southern it's not served.

Owner Carl Hill,"Its the seasoning, you know we just use Southern Style seasoning, plain old salt and pepper and a few secrets that we won't reveal, basically we put a lot of love in what we do"

I asked a man of god about soul food wondering about its connection to the bible or not?

Bishop William Simpson the 3rd, Senior Pastor, Kingdom Harvest Church Chattanooga, "Homecooked meal with mothers and grandmothers specials recipes, say for example, fried chicken or greens or mashed potatoes"

So it wasn't too much about religion at all it was about chicken and good times and family times.

C and W Cafe had a lot of happy people,

"Must not miss Sunday this is the best day ever, we get soul food here"

Owners,"If it wasn't for the customers  there wouldn't be a C and W, it's the customers that keep coming back, that let us know that we are doing a good job".

A good job is one way to put it, i couldn't stop even though i wasn't hungry!.

After rolling off home i decided to take a leap of faith and take this Southern Food thing to a different level.

BBQing is Harder than it looks.

"It all depends on the thickness of the meat, but i usually turn the meat every 15  minutes or so, that's the trick in it, turn the meat and it will cook evenly throughout"

So that's what i was doing wrong,

I also started putting water on the meat thinking it would make it cook slower.

"Not use water, the top on the BBQ controls the flame, if you don't have a top, you going to have to have water to put the fire out, if you got a top your good"

So a top and no water, or no top plus water and keep turning, either way it was all about too much too soon.

But once again there was food to be eaten,

"For such a small piece of meat you get so much flavor, so much texture, you actually feel like your being fed"
