
Sweet Potato Casserole

Jan Collier sent us this recipe. She says her husband says this is the best Sweet Potato Casserole he has ever eaten. She says that she has found using the smaller potatoes makes it sweeter.
Sweet Potato Casserole
Ingredients:
3 cups of boiled sweet potatoes, mashed
1 cup of sugar
1/2 cup of milk
1/2 cup butter
2 eggs
1 tsp vanilla
Topping:
1 cup grated coconut
1 cup chopped pecans
1 cup of light brown sugar
1/3 cup of flour
1/3 cup of melted butter
Mix the potatoes with the first five ingredients and put into a 9x13 dish. Mix topping ingredients and spoon onto potatoe mixture. Cook in oven preheated to 375 degrees for 30 minutes or until the topping just turns brown and crunchy.
This also freezes well and can also be made ahead.
