Harvest's Bounty Chutney

2 1/4 cups light brown sugar

1 1/2 cups cranberry juice

1/2 cup apple cider vinegar

1/2 tsp ginger

1/4 tsp allspice

1/4 nutmeg

2 packages fresh or frozen cranberries (12 oz each)

1 package fresh or frozen blueberries (8 oz.)

1 granny smith apple (peeled and coarsely chopped)

1 orange (peeled and sectioned ) **save orange peel**

1/2 cup golden raisins

1/2 cup dried apricots (coarsely chopped)

2 tbls grated orange peel

 

In a large saucepan mix the brown sugar, cranberry juice, apple cider vinegar and spices. Bring to a boil. Reduce the heat and continue to simmer until sugar is completely dissolved (2-3 minutes). Stir in all the fruits and orange peel; return to a boil. Reduce the heat and simmer uncovered for about 45 minutes, stiring occasionally, until chutney thickens. Can be served warm or chilled. Makes about 6 cups. Leftovers should be refridgerated or can be frozen.
