National Cornbread Festival coming to South Pittsburg this weekend!
Dave Staley and Kay Blevins spent the morning in the kitchen. The anchor team made cornbread recipes to celebrate the return of the National Cornbread Festival in South Pittsburg Tennessee. Kay made a berry cornbread, while Dave cooked up some breakfast cornbread. Breakfast Cornbread
Heat pan/oven to 400 degrees
Melt 1/2 stick butter
1 cup yellow cornmeal
1 cup flour
1/2 cup brown sugar
1 cup buttermilk
1/2 stick butter (grated)
1 teaspoon of vanilla extract
3 eggs
Add 1-2 stick of butter to hot pan…add cup of brown sugar to small bowl..add 1 teaspoon of vanilla extract to small bowl….
Mix goes into hot pan…add small bowl mix to top of mix in a hot pan…bake at 400 degrees for 25 minutes
Blueberry/Strawberry Cornbread
2 eggs
1 cup buttermilk
1/3 cup sour cream
1/2 cup vegetable oil
2 1/2 cups self rising flour
1/4 teaspoon salt
1 cup sugar
1 1/2 cup blueberries and strawberries
1 teaspoon vanilla
Mix all dry ingredients. Combine eggs, vanilla, vegetable oil, sour cream, buttermilk…stir in dry ingredients. Add blueberries and strawberries…finally sprinkle with sugar. Bake at 400 degrees for 20-25 minutes (less for muffins)
