Holiday Turkey Brine
Ingredients:
· 3 cups apple cider
· 2 gallons cold water
· 4 tablespoons fresh rosemary
· 5 cloves garlic
· 1 ½ cups kosher salt
· 1 tablespoon allspice berries
· 3 tablespoons black peppercorns
· 3 large oranges, cut into wedges
Instructions:
1. Make the Brine: In a large pot, combine all ingredients and bring to a boil, stirring until the salt dissolves. Turn off the heat, cover, and let the brine cool completely.
2. Brine the Turkey: Place the uncooked turkey in a large brining bag or pot. Pour the cooled brine over the turkey, ensuring it’s fully submerged. Refrigerate for 16 to 24 hours.
3. Rinse the Turkey: Remove the turkey from the brine and discard the brine. Submerge the turkey in a pot or sink filled with fresh, cold water for 15 minutes to remove excess salt.
4. Prepare for Roasting: Remove the turkey from the water, pat dry thoroughly with paper towels, and cook according to your preferred roasting method.
