Turkey Sliders with Cranberry Jam on Hawaiian Rolls
Yield 6 2 oz sliders
Turkey Slider
- 1 lb Ground Turkey
- 2 Granny Smith Apples – Diced into 1/8”
- 1 bunch cilantro – finely chopped
- 1 packaged Toll House Crackers – Crushed
- 2 Eggs – Beaten
- 4 oz Shredded Parmesan Cheese
- 1 tbsp Kosher Salt
- ½ Tbsp Black Pepper
- 1 tsp Olive Oil
Instructions:
Pre Heat Oven to 350F
In a mixing bowl, combine all ingredients and mix until combined. Let mixture sit for about 10 minutes in refrigerator. Take mixture and form into (8) 2 oz balls. Spray a baking sheet with pan spray and place balls on sheet. Bake for 15-18 mins or until internal temperature reaches 155F. Remove from oven and let rest for 10 mins.
Cranberry Jam
Yield 3 cups
- 1 bag Fresh Cranberries
- 3 oz Olive Oil
- 2 cups Sugar
- 2 cups Red Wine
- 1 cup Water
- 1 Yellow Onion – Diced Small
- 3 sticks of Celery – Diced Small
- 5 Cloves of Garlic – Minced
- 1 tsp Fresh Cinnamon
- 1 tsp Fresh Nut Meg
- 1 tbsp Kosher Salt
- ½ tbsp Black Pepper
Instructions:
In a sauce pan, heat olive oil over medium heat, add Garlic, Onions and Celery and cook until translucent (about 2 minutes), add cranberries and turn heat to “High”. Add Water, Red Wine, and Sugar. Let cook on “High” for about 15 mins. Reduce to “Medium/Low” Heat, add cinnamon, nutmeg, salt, and pepper. Continue cooking for 30 mins, the jam should have a jelly like consistency. Remove from heat and place in a container and place in refrigerator to let jam congeal.
Hawaiian Roll Buns
Yield 12 buns
- 1 package Hawaiian Rolls
- 1 oz Melted Butter
Pre heat skillet over Medium heat.
Cut Buns in half and brush on melted butter. Toast cut sides on skillet for 2 mins – the buns will be golden brown.
Assembling Sliders
Pre Heat Oven to 350F, place turkey balls in oven for 5 mins to heat thoroughly.
Take Toasted Hawaiian Rolls, on bottom bun slather on about 2 table spoons of Cranberry Jam, top with Turkey Ball, and Place top bun on top. Secure with a Tooth Pick. Serve immediately.
Sweet Potato Fries”
Yield 6 Portions
Ingredients:
- 1 Package Sweet Potato Fries
- ½ lb Unsalted Butter
- 1 Jar Marshmallow Fluff
- 4 oz Pecans – toasted
- Fresh Cinnamon
- Fresh Nutmeg
- 8 strips bacon – cooked and chopped
- 3 oz honey
- 4 oz Bourbon
- 2 oz Sugar
- 2 tsp salt
- 1 tsp black pepper
Instructions:
Pre heat oven according to Sweet Potato Fries packaging and cook following directions.
In a sauté pan over medium heat add butter, sugar, marshmallow fluff, 4 oz bourbon, and cook until melted. Season with Cinnamon, Nutmeg, Salt, and Pepper.
On an oven safe plate place sweet potato fries and top with Marshmallow Mixture, and bake for 10 minutes at 350F.
Remove from oven and drizzle with Honey, Chopped Bacon, and Pecans
Serve Immediately
French Green Beans –
Yield 6 Portions
Ingredients
- 1 lb French Green Beans
- 3 oz Butter
- 2 tsp Salt
- 1 tbsp Pepper
- 2 oz water seasoned with Salt and pepper
Instructions:
Trim Green Beans and Sit aside
Heat Saute Pan over Medium Heat, Add butter and green beans, toss to coat melted butter. Cook for about 2 minutes, add 2 oz seasoned water. Cook until water is evaporated, and green beans are tender.
