The BBQ pitmaster now has a side job of making Charcuterie boards
COVINGTON, Georgia (WDEF) – 55 year old Jim Stancil of Covington, Georgia knows how to barbeque. And grill. They’re two different things you know.
“Big Jim” has owned his own catering service for almost 30 years. It’s his livelihood and his lifestyle.
But the pandemic hit his business hard. He went from some 200 events a year to about 10.
So roughly a year ago, Jim started brain storming!!
“After I had done all the stuff that needed to be done on my house, and worked out in the yard, I thought I would grab some wood and sand some stuff down. People would end up coming to my house for barbeque, and they’d ask about that board. I would tell them I made it.”
What was he making? Charcuterie boards. You know, those boards you put out when you entertain guests. Put some cheese, chips, dip, whatever on them.
Well, it’s turned out to be another business for “Big Jim.” People are buying his boards. He’s even building his own shop now…..all cypress wood on the inside. It’s being built right next to his barbeque shop.
So Stancil, safe to say, now has a SECOND passion!
“When you start to sand boards, well, I love the fact that these boards were going to be thrown away. And I can make something out of nothing. It’s cool.”
Jim says he has no problem finding the wood to work on. He says people now call him all the time. In fact, some of the wood he works on is up to 120 years old.
He turns all of it……..into something useful. Think of pitmaster turning charcuterie board master!!

Jim Stancil is highly regarded in the barbeque world.
He’s appeared on many different networks as both a contestant and a judge.
He’s also been catering for many years for both the Titans and the Falcons.
