New Restaurant announced for The Hotel Chalet at the Choo Choo
Elsie's Daughter will be an Appalachian Bistro at the historic venue this fall

Elise’s Daughter at The Hotel Chalet at The Choo Choo will have several outdoor spaces that evoke a sense of secluded sophistication.
CHATTANOOGA, Tenn. (WDEF) – The people who brought us The Rosecomb in Riverview are opening a new spot at the Choo Choo.
Chloe Wright and Ryan Smith created the neighborhood bar restaurant in a cottage on Barton Avenue.
Their next venture will be called Elsie’s Daughter.
They’re calling it an Appalachian Bistro that will be in The Hotel Chalet at The Choo Choo.
The idea is to combine Appalachian tastes into a French Bistro.
That means tartars, oysters, bone marrow, smoked trout, frites and exquisite salads highlighting local ingredients.
“Ryan and Chloe created something incredibly unique and distinctly Chattanoogan that was inspired by their own experience when they opened Rosecomb,” said Jake Lamstein, CEO of Trestle Studio, and owner of The Hotel Chalet at The Choo Choo. “Their approach to combining flavors and sourcing local, sustainable ingredients will add a new layer of casual sophistication to culinary and mixology offerings at The Hotel Chalet at The Choo Choo.”
They say Elsie’s Daughter will be in a space at The Choo Choo that was not previously open to the public.
The main bar and dining room, known as The Parlour, will have multiple entrances, connecting to both the hotel and on Station Street.
By the way, the name Elsie was very important to the original architect of the Choo Choo.
His wife, daughter and granddaughter were all Elsies.
The hotel will begin taking reservations this summer.
The new restaurant is scheduled to open in the fall.
