Mom to Mom – After School Snacks

Sarah: Welcome to Mom To Mom. Today, we’re in the kitchen to show you how to keep those after school snacks healthy.
Sarah: All right, Chef Kate. You know the kids, they come home from school and they’re starving, and they wanna grab a bag of chips.
Kate: Right.
Sarah: You’ve got an alternative.
Kate: I got the perfect thing! A Caprese pasta salad. It’s quick, it’s easy, it’s healthy. Its got veggies, and it’s delicious.
Sarah: Perfect. All right, let’s get started.
Kate: So we’re gonna bring a pot of salted water to a boil and cook the noodles for about 10 minutes, until they’re al denté. Roughly chop the spinach. Thinly slice the basil. Halve the tomatoes and quarter the mozzarella cheese. Once the pasta’s cooked, we’re gonna go ahead and add all the ingredients into a bowl. Drizzle of olive oil, add a little pinch of salt and black pepper, toss it all together, and taste. Adjust these things, and serve!
Kate: Okay so we’re gonna wanna make this in advance, put it in the refrigerator. I like to actually serve it in little mason jars. Put the lid on, and then when the kids come home from school, open up.
Sarah: It’s just like grab and go!
Kate: Mm-hmm (affirmative). Easy.
Sarah: Oh my gosh, so good!
Kate: Let’s give it a taste!
Kate: Smells so good, that basil.
Sarah: That’s delicious.
Kate: Mm-hmm (affirmative).
